Contrary to popular belief, a freezer does not actually cool the items within. Instead, the appliance removes the heat that is present in the foods. This is accomplished through the freezer repeatedly circulating gas from areas of high pressure to areas of low pressure. This causes the temperature of the gas to decrease, thereby removing present heat.

The freezer contains a compressor in a closed tubing system, in which the refrigerant gas resides. The compressor acts by pumping the coolant and compressing the gas. The refrigerant then passes through the freezer's coils which are present on the back of the freezer and enters the freezer's interior via the expansion valve. As the gas enters the expansion valve and travels through, the pressure of the gas decreases and the temperature does as well.

Inside the American style fridge freezer or other form of freezer, there is a fan which serves to circulate the air inside the appliance over the cool tubing. The gas is then able to absorb the heat from the warmer air which is inside the freezer. Therefore, instead of cold air being blown in, the heat is removed.

Ironically, if the temperature outside of the freezer is too cold, the freezer does not function as efficiently as it otherwise would. It is completely necessary for the appliance to be in an area where the outside temperature will always be significantly warmer than the inside of the freezer. This is why the refrigerator should be located inside, perhaps next to the kitchen's dishwasher, instead of in a cold garage. The cold weather in the garage would actually prevent the refrigerator or freezer from successfully cooling any food within.

As the freezer cools the air within, the moisture in the freezer's air is able to condense. The water which is present in the freezer will turn to ice although most freezers today possess a defroster which acts automatically. This defroster, which consists of a simple device which heats the freezer, melts the frost in the freezer in order to prevent build up. It is typically controlled by a thermostat and a defrost timer. A pan is also present in the freezer which serves to collect any moisture which is melted via the automatic defroster. This prevents the refreezing of the water.

An additional thermostat acts by activating the freezer's compressor whenever the temperature in the freezer becomes too high. This temperature can be adjusted using the temperature control mechanism present in the freezer.

A switch in the door is responsible for closing the circuit. Therefore, when the door is open, a light is switched on. Typically the freezer will disable its components, including its defrost heater and fan, when the door is open.
