Vegetarian Quinoa Recipe (Also Vegan) - Directions And Ingredients To Make The Best Quinoa

This vegetarian quinoa recipe is not only delicious but simple and healthy

. If you haven't seen it before, quinoa is a small off-white grain, and has been getting a lot of attention lately because of its balance of amino acids. That makes it a great source of protein for vegetarians and vegans.

Quinoa is a much lighter grain than some other whole grains like brown rice or barley, and cooks very quickly.

Serves 4 for dinner.

Vegetarian Quinoa Recipe Ingredients


1 cup (dry measure) quinoa

pinch sea salt

1 tsp sesame oil (untoasted), or olive oil

5 slice mushrooms

1 diced yellow pepper

4 chopped leaves bok choy

1 small piece of ginger, minced

1 tsp toasted sesame oil

zest and juice of 1 lime

2 Tbsp tamari (or soy sauce)

Vegetarian Quinoa Recipe Directions

Before cooking, you should rinse the quinoa with water to remove dirt, dust and the slightly bitter taste from the grain. Drain and then add 2 cups of water for every 1 cup of quinoa. Add a pinch of salt to the water and simmer for 20-30 minutes. The swirl of the grains, with a translucent center, is visible when quinoa is fully cooked, and the grain is fluffy. While it's cooking, don't stir the quinoa.

Heat a large pan to medium, then add the untoasted sesame oil and mushrooms. Stir the mushrooms and leave them to cook until they're soft and are releasing their juice. Next, add the peppers, giving them time to start to release their juice. Then add the bok choy, leaving it until the green parts have just started to wilt.

Add the ginger and lime zest, along with the salt, and stir to distribute through the vegetables. Next, add the cooked quinoa and stir through the vegetables, being careful not to mush it.

Stir together the lime juice, tamari and toasted sesame oil, and then add it to your vegetables. If you like to garnish, sesame seeds are perfect. I hope you enjoy this vegetarian quinoa recipe!
