In hand service means that only a single employee of the courier company is ever going to be in possession of your legal documents. This creates an utterly secure environment for many reasons. First of all, many times it's not the document itself which is valuable, but rather the information it contains. When only a single courier is carrying the document, they will have to sign a confidentiality agreement. If that information did leak, it would become immediately clear where the liability lay. This is part of creating accountability.
These deliveries are secure because the couriers are never going to let the documents out of their site. It doesn't even matter how far the documents are being shipped. If you need to ship documents overseas securely, the courier will fly commercially and take the documents as carry on, never letting them out of their site.
