Connoisseurs of coffee can now regale in the fact that recent research into coffee flavours has yielded many new exciting varieties that they can enjoy. They are natural-tasting yet offer you a distinctive taste that you haven't tasted before.

Kopi luwak is one such variety that coffee lovers from around the globe are going gaga over. This variety of coffee hails from Indonesia and is made from coffee berry beans that have been eaten by the Asian Palm Civet, and then passed through its digestive tract. This process of digestion lends Kopi Luwak its distinctive taste because when these beans pass through the civet's stomach, they are injected with proteolytic enzymes that make shorter peptides and produce extra free amino acids.


The beans are passed out through the bowels which are then collected, thoroughly rinsed and washed, dried in the sun, roasted lightly and brewed. All this lends a very unique taste to the coffee made with these beans which is less bitter than regular coffee.

Kopi Luwak is widely considered as the most expensive variety of coffee and is indigenous to the islands of Sumatra, Java, Bali and Sulawesi in the Indonesian Archipelago and the Philippines. It is also produced in East Timor, and elsewhere in the world but using artificial flavouring methods. It sells for between US $100 and $600 per pound. It is sold by weight mainly in Japan and the United States and served in Southeast Asian coffeehouses by the cup which can cost anywhere between US $20 to $40 per cup.
